Baked Eggs in Pomodoro Sauce








This whole week had been all about feasting ..... not the regular meals we have everyday, but feasting ... big, huge celebratory type meals. 
We had a bloggers meet-up. Feast. 
Then the inlaws had some happy moments and wanted to take us out for a treat. No coffee shop stuff, they said, so it's another fancy restaurant. Feast. 
Then we overdid it at the buka puasa stalls (that's the food stalls operated by muslim folks selling their specialities for the breaking of fast (Iftar) one month before Eid. And never go shopping for food on an empty stomach. I never learn). Feast.
Whoo! That's enough to have me hibernating for the next month. 
So a simple lunch it'll have to be today. Can't imagine putting in anymore rich, spicy, oily, creamy, sweet ..... gosh, that practically covers everything!
I'd bookmarked this from Quay Po Cooks sometime ago. It's perfect for a day like this. Light and easy. Served with some crusty bread .... I'm a happy person!
Thanks, Veronica, for sharing this. I did not have the exact same ingredients at hand, so I tweaked it to what was available in my fridge and pantry.


This was enough for 2 servings.




INGREDIENTS


1 can (411g, dunno why such an odd figure) peeled whole tomatoes
1 tbs oil for sauteing (I used grapeseed)
a few sprigs of thyme, stalks removed
2 cloves garlic, minced
1 large onion, finely diced
3/4 cup grated strong cheddar (or more if you prefer)
2 eggs
salt and black pepper to taste



METHOD


Heat oil and saute garlic and onions. 
When onions are soft, add in tomatoes. Squish them up a little. (Or a lot. I like mine chunky).
Add the thyme, salt and pepper. 
Simmer until reduced into a thick gravy. About 10 mins.
Scoop into 2 ovenproof bowls. (I used 4.5" ramekins)
Sprinkle grated cheese over the top.
Crack an egg onto that and bake at 180˚C for about 10 mins until cheese is melted, golden and egg is cooked but still has a runny yolk.
(Mmmmmm .... I love runny yolk!)


Serve with crusty bread.

    What a gorgeous egg and tomato dish... (I love everything with egg!). It's also quite light, but doesn't look like typical light food. I love it and I love your elegant photos!
    Can you believe that yesterday I bookmarked a Sichuanese tomato and egg recipe? (I must have bookmarked half of the book already). I intend to do it soon, tomatoes are so delicious now.

      Hehe ... yeah, Asians take every opportunity to eat! Now you can see why I have such difficulty keeping my seams together :)
      I too, love eggs. Could never resist a runny yolk! Yup, it's light, refreshing and should I dare say healthy too?

    2. I have had this for breakfast today. Very simple, not hot at all (but I took some pickled chilies from my pantry as a side dish ;-) ) but really good. I have emptied my plate in 5 minutes even without thinking of a photo... It happens so often. Maybe next time! (Your dish looks much more complex and interesting though!).

  4. Gosh!!! I ate...and I ate...and I ate... Now I'm so bloated and sluggish. Will have to go on a liquid diet for a week at least now - plain porridge! LOL!!!

    So nice to get to meet you in person even though it was just a brief acquaintance. We'll meet again sometime... Perhaps you can hop over to Sibu one of these days - would love to have you around, stay at my place, free food, free tours... Now, isn't that irresistable?

    1. LOL!!! I can imagine how it must be like for you. After that night, we can all go back and the next day it's back to normal. But you're on holiday and your mission is to eat ... well, even if it isn't, meeting up with friends usually means having something to eat anyway.

      By all means, double or triple the amount. You can even cook a whole lot of the pomodoro and keep it in bottles for whenever you need some tomato based sauce. It's pretty versatile. Enjoy!

  10. Wow, that is a lot of feasting ;-). Sounds like you've been having a lot of fun and that's always a good thing! Your baked eggs look simply delicious - soft, juicy and surrounded by goodness - love the combo of tomato, cheese and egg. This dish reminds me of the Mexican classic Huevos Rancheros; a favourite. Yum!!

    1. Yeah, it was a lot to handle all within a week. Fun it was at the time but after that it's the battle with the mirror and clothes .... sigh. Once in a while, not too often.
      Hmmm, you're right, I've never thought of the similarity with Huevos Rancheros. I guess each country will have their different versions of baked eggs altho I believe HR uses fried eggs.... and I suddenly have a craving for guacamole. Mmmm ... think I'll have some later :)

  11. You have no idea how many times I've made this Sicilian inspired baked eggs in Pomodoro sauce, that I actually learned how to make while living in Sicily! My sister-in-laws taught me so many authentic Sicilian dishes, including the Rice balls, the Caponata, Pasta al Forno, Baked Sicilian Eggplant stuffed with rice, minced beef, pinenuts, raisins and capers.

    Getting hungry now, and will want to make this yummy baked eggs again, real soon! Love how you made them...perfect, and delicious!

    1. Thanks Elisabeth. I can imagine this is simple enough that someone must have done it sometime, somewhere. Learning it in Sicily? Wow, how authentic is that?! All the other dishes sound pretty interesting as well.

    1. I'm sure you'd love this. Haven't met anyone who doesn't .... yet. Altho my husband finds it a little tart but that can be remedied with a pinch of sugar to the sauce. Mmmm ... sourdough. Gosh, my tummy just growled!

    1. Har har. That was what the label on the can said. Oh, the egg has to be exactly 60g, no more, no less. Anything more, you've gotta take out some yolk without breaking it.
      I only took pictures of the food during the meet and a pic of the people taking pics of the food. Food bloggers are mad. Each time a dish arrives on the table, everyone rushes with their big gigantic cameras with big gigantic lenses to grab a shot of it. Me, I brought my measly mobile phone with a camera function and posted my not so great pictures on my facebook. You can see them if you're on fb. I know, I know, you're forgiven if you're not into fb. Took me a long time before I'd even gotten myself there. But you can see a post on the gathering and other pics at Quay Po Cooks. She's the 1st one to put it up.

    2. Thanks Ping for clarification on the eggs. I also read somewhere that removing part of the yolk without breaking is the most natural thing to do in such situations, top pastry chefs do this all the time:)
